4-5 medium-sized potatoes, boiled and cubed

3 hard-boiled eggs, chopped

1/2 cup mayonnaise

2 tablespoons yellow mustard

2 tablespoons sweet pickle relish

1/4 cup finely chopped red onion

1/4 cup finely chopped celery

1/4 cup finely chopped green bell pepper

1/4 cup finely chopped red bell pepper

1/4 cup chopped fresh parsley

1 teaspoon sugar

Salt and pepper to taste

Paprika for garnish (optional)



In a large bowl, combine the boiled and cubed potatoes and chopped hard-boiled eggs.

In a separate smaller bowl, whisk together the mayonnaise, yellow mustard, sweet pickle relish, sugar, salt, and pepper until well combined.

Pour the mayonnaise mixture over the potatoes and eggs. Gently fold the mixture together until the potatoes and eggs are evenly coated.

Add the chopped red onion, celery, green and red bell peppers, and parsley to the potato mixture. Stir gently to incorporate all the ingredients.

Taste and adjust the seasoning if needed by adding more salt, pepper, or other desired seasonings.

Cover the bowl with plastic wrap and refrigerate for at least an hour to allow the flavors to meld together.

When ready to serve, sprinkle paprika on top for garnish if desired.
